Synopsis

Cristina Martínez cooks Philadelphia's most respected barbacoa from family recipes passed across generations — and has turned that reputation into a platform for undocumented immigrants' rights. Her story runs well past the dining room. Musa Dağdeviren runs Istanbul's Çiya as a rescue operation: he hunts down regional Turkish dishes on the verge of extinction and cooks them back into circulation before the recipes are gone. Bo Songvisava opened a sustainable restaurant in Bangkok out of frustration — authentic Thai cuisine was being crowded out by tourist-ready shortcuts, and she wanted no part of that. Albert Adrià spent years as the creative force behind El Bulli alongside his brother Ferran, then built an entire constellation of genre-bending restaurants across Barcelona, each one a different experiment.
